Gnocchi with kale

Ingredients

for 2 people

Gnocchi
1 tbsp olive oil
300 g potato gnocchi
Kale
1 tbsp olive oil
200 g washed, prepared kale
1 tin white beans (approx. 420 g), rinsed, drained
1 tbsp balsamic vinegar
2 tbsp water
1 tbsp butter
1 tsp Sriracha sauce
½ tsp salt
To serve
30 g pecan nuts, roasted, coarsely chopped

How it's done

Gnocchi

Heat the oil in a non-stick frying pan. Add the gnocchi, fry for approx. 5 mins, remove from the pan.

Kale

Heat the oil in the same pan. Add the kale, fry for approx. 3 mins. Add the beans, balsamic and water, heat through. Mix in the butter and Sriracha with the gnocchi, season with salt.

To serve

Plate up the gnocchi, sprinkle the pecan nuts on top.
