Gnocchi with kale
Ingredients
for 2 people
| 1 tbsp | olive oil |
| 300 g | potato gnocchi |
| 1 tbsp | olive oil |
| 200 g | washed, prepared kale |
| 1 tin | white beans (approx. 420 g), rinsed, drained |
| 1 tbsp | balsamic vinegar |
| 2 tbsp | water |
| 1 tbsp | butter |
| 1 tsp | Sriracha sauce |
| ½ tsp | salt |
| 30 g | pecan nuts, roasted, coarsely chopped |
How it's done
Gnocchi
Heat the oil in a non-stick frying pan. Add the gnocchi, fry for approx. 5 mins, remove from the pan.
Kale
Heat the oil in the same pan. Add the kale, fry for approx. 3 mins. Add the beans, balsamic and water, heat through. Mix in the butter and Sriracha with the gnocchi, season with salt.
To serve
Plate up the gnocchi, sprinkle the pecan nuts on top.
