Burrata with braised cherry tomatoes
Ingredients
for 4 people
| 2 | tomatoes |
| ½ tbsp | olive oil |
| 500 g | cherry tomatoes, cut in half |
| 1 | shallot, cut into thin slices |
| 3 tbsp | balsamic vinegar |
| 3 sprig | oregano, finely chopped |
| ¼ tsp | salt |
| a little | pepper |
| 4 | burrata |
| ¼ tsp | sea salt |
| 4 sprig | oregano, leaves torn off |
How it's done
To prepare
Freeze the tomatoes for approx. 8 hrs. or overnight.
Cherry tomatoes
Heat the oil in a non-stick frying pan, add the tomatoes, stir fry for approx. 3 mins. Reduce the heat, add the onion, sauté for approx. 3 mins. Add the balsamic, bring to a boil, reduce the balsamic almost completely. Remove the pan from the heat, add the oregano, mix, season.
To serve
Plate up the cherry tomatoes and burratas, finely grate the frozen tomatoes on top. Sprinkle with fleur de sel and oregano.
