Ingredients

for 4 people

Salsa
500 g pineapples, peeled, diced
½  red onion, finely chopped
red chilli, deseeded, finely chopped
organic lime, grated zest and the juice
1 bunch coriander, finely chopped
Plantains
plantains, peeled and cut into slices approx. 1 cm thick
1 tsp smoked paprika
1 tsp caraway seeds, crushed
1 tsp blend of Mexican spices
½ tsp salt
  oil for frying
To serve
mini-tortillas
1 tin black beans (approx. 130 g), rinsed, drained

How it's done

Salsa

In a bowl, mix the pineapple with all the other ingredients up to and including the coriander.

Plantains

Place the plantains in a bowl, season, mix. Heat the oil in a non-stick frying pan. Fry the plantains for approx. 2 mins. on each side.

To serve

Prepare the tortillas according to the packet instructions. Fill the tortillas with the beans, plantains and salsa.
