Tacos with plantains and pineapple salsa
Ingredients
for 4 people
| 500 g | pineapples, peeled, diced |
| ½ | red onion, finely chopped |
| 1 | red chilli, deseeded, finely chopped |
| 1 | organic lime, grated zest and the juice |
| 1 bunch | coriander, finely chopped |
| 2 | plantains, peeled and cut into slices approx. 1 cm thick |
| 1 tsp | smoked paprika |
| 1 tsp | caraway seeds, crushed |
| 1 tsp | blend of Mexican spices |
| ½ tsp | salt |
| oil for frying |
| 8 | mini-tortillas |
| 1 tin | black beans (approx. 130 g), rinsed, drained |
How it's done
Salsa
In a bowl, mix the pineapple with all the other ingredients up to and including the coriander.
Plantains
Place the plantains in a bowl, season, mix. Heat the oil in a non-stick frying pan. Fry the plantains for approx. 2 mins. on each side.
To serve
Prepare the tortillas according to the packet instructions. Fill the tortillas with the beans, plantains and salsa.
