Chicken and grape salad
Ingredients
for 2 people
4 dl | vegetable bouillon |
2 | chicken breasts (each approx. 150 g) |
2 tsp | mustard |
150 g | plain greek yoghurt |
½ tsp | salt |
a little | pepper |
25 g | cress |
200 g | mixed seedless grapes, cut in half |
50 g | Parmesan by the piece, cut into cubes |
How it's done
Chicken
Bring the stock to the boil, reduce the heat, add the chicken, cook for approx. 15 mins. just below the boil. Allow the chicken to cool slightly in the stock, remove the chicken, pull apart using two forks.
Dressing
In a bowl, mix the mustard with all the other ingredients up to and including the pepper.
Salad
Add the chicken, cress and grapes to the dressing, mix. Serve the salad on a platter, top with parmesan.
