Gnocchi salad

Ingredients

for 2 people

Gnocchi
1 tbsp olive oil
300 g potato gnocchi
300 g red peppers, cut into strips
¼ tsp salt
a little  pepper
Salad
2 tbsp white balsamic vinegar
2 tbsp olive oil
1 tsp liquid honey
½ tsp dried oregano
¼ tsp salt
a little  pepper
1 tin green beans (approx. 420 g), rinsed, drained

How it's done

Gnocchi

Heat the oil in a non-stick frying pan. Add the gnocchi and peppers, fry for approx. 5 mins., season. Remove, allow to cool slightly.

Salad

In a bowl, combine the balsamic with all the other ingredients up to and including the pepper, add the green beans and gnocchi, mix.
