Gnocchi salad
Ingredients
for 2 people
| 1 tbsp | olive oil |
| 300 g | potato gnocchi |
| 300 g | red peppers, cut into strips |
| ¼ tsp | salt |
| a little | pepper |
| 2 tbsp | white balsamic vinegar |
| 2 tbsp | olive oil |
| 1 tsp | liquid honey |
| ½ tsp | dried oregano |
| ¼ tsp | salt |
| a little | pepper |
| 1 tin | green beans (approx. 420 g), rinsed, drained |
How it's done
Gnocchi
Heat the oil in a non-stick frying pan. Add the gnocchi and peppers, fry for approx. 5 mins., season. Remove, allow to cool slightly.
Salad
In a bowl, combine the balsamic with all the other ingredients up to and including the pepper, add the green beans and gnocchi, mix.
