Trout with cherry vinaigrette
Ingredients
for 4 people
3 tbsp | raspberry vinegar |
2 tbsp | rapeseed oil |
¼ tsp | salt |
a little | pepper |
1 | red onion, cut into thin slices |
300 g | cherries, pitted, halved |
100 g | baby lettuce |
2 | smoked trout filets (each approx. 125 g), torn into pieces |
20 g | Micro Greens |
How it's done
Vinaigrette
Whisk the vinegar and oil in a small bowl, season. Add the onion and cherries, mix.
To serve
Plate up the salad with the trout fillets. Top with the cherry vinaigrette, garnish with the micro greens.
