Strawberry muffins with white chocolate

For coffee and cake, as an eye-catching addition to the brunch buffet, or as a sweet treat between meals: we love these fluffy and moist strawberry muffins with scrumptious white chocolate chips. The batter is quick to make and the recipe works every time.

Ingredients

for 12 pieces

Batter
125 g butter, soft
150 g sugar
eggs
120 g white flour
1 tsp baking powder
1 pinch salt
50 g strawberries, cut into small pieces
50 g white chocolate, cut into small pieces
To decorate
some  strawberries, to decorate
a little  icing sugar, to dust

How it's done

Batter

Mix the butter and sugar using the whisk attachment on a mixer. Add the eggs one at a time and continue to beat until the mixture becomes lighter in colour. Combine the flour, baking powder and salt, mix in. Carefully fold in the strawberries and chocolate. Transfer the mixture to the prepared tin.

To bake

Approx. 20 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, leave to cool on a rack.

To decorate

Decorate the muffins with the strawberries and dust with icing sugar.
