Süssmostcreme (apple custard) with chocolate
Ingredients
for 4 people
5 dl | fruit juice |
3 | fresh eggs |
1 | organic lime, use grated zest and 1 tbsp of juice |
1 ½ tbsp | Maizena cornflour |
60 g | sugar |
¼ tsp | cinnamon |
50 g | dark chocolate X |
1 ½ dl | cream, beaten until stiff |
¼ tsp | cinnamon |
How it's done
Custard
In a pan, whisk the apple juice with all the other ingredients up to and including the cinnamon. Bring to the boil over a medium heat, whisking constantly. As soon as the mixture thickens, remove the pan from the heat and continue to stir for approx. 2 mins. Pour the custard through a sieve into a bowl. Place a sheet of cling film directly over the top and leave to cool completely, chill for approx. 1 hr.
Chocolate
Stir the custard until smooth, add the chocolate, mix. Set aside 4 tbsp of the whipped cream, fold the remainder of the whipped cream into the custard.
To serve
Plate up the custard, top with the reserved whipped cream, sprinkle with the cinnamon and reserved chocolate.
