Grilled asparagus with feta
Ingredients
for 4 people
| 500 g | green asparagus, cut off the lower woody ends |
| 1 tbsp | olive oil |
| ¼ tsp | salt |
| ½ tbsp | Dijon mustard |
| 3 tbsp | white balsamic vinegar |
| 2 tbsp | olive oil |
| 1 tbsp | liquid honey |
| 1 | organic lemon, use grated zest and 1 tbsp of juice |
| 2 sprig | oregano, finely chopped |
| 100 g | feta, crumbled |
| 4 sprig | oregano, leaves torn off |
How it's done
Charcoal/gas/electric grill
Brush the asparagus with oil, grill over/on a medium heat (approx. 200 °C) with the lid down for approx. 6 mins., turning twice. Transfer the asparagus to a platter, season with salt.
Vinaigrette
In a bowl, combine the mustard with all the other ingredients up to and including the oregano.
To serve
Drizzle the asparagus with the vinaigrette, top with the feta and oregano.
