Vegan banana waffles

Crispy on the outside, soft on the inside. These waffles will mesmerize you with their two different textures. They are gluten-free and vegan, and will be a hit with the whole family – whether for breakfast or as an afternoon snack.

Ingredients

for 8 pieces

Batter
ripe bananas, crushed
2 dl almond drink
2 tbsp coconut oil, melted
2 tbsp maple syrup
100 g gluten-free wholegrain rolled oats
100 g ground almonds
To bake
1 tbsp coconut oil

How it's done

Batter

Combine the bananas, almond drink, oil and maple syrup in a bowl. Add the oat flour and almonds, beat using the whisk on a mixer to make a smooth batter.

To bake

Heat the waffle iron, brush with a little coconut oil. Spoon approx. 2 heaped tablespoons of batter onto the waffle iron, cook for approx. 3 mins. Remove the waffles, place on a cooling rack. Repeat these steps with the remainder of the batter, serve the waffles warm.
