Onion sandwiches
Ingredients
for 4 pieces
| 1 tbsp | olive oil |
| 180 g | red onions, cut into thin slices |
| 2 tbsp | red wine vinegar |
| 1 | red chilli, deseeded, finely chopped |
| 1 tbsp | sugar |
| ¼ bunch | thyme, leaves torn off |
| 8 slice | nut bread (approx. 400 g) |
| 100 g | Gouda , coarsely grated |
How it's done
Confit
Heat the oil in a pan. Add the onions, cook over a low heat for approx. 10 mins., stirring occasionally. Add the vinegar, chilli, sugar and thyme, cover and cook for approx. 10 mins., stirring occasionally.
Sandwiches
Spread 4 slices of bread with the onion confit, sprinkle with cheese. Top each with another slice of bread, toast for approx. 4 mins in a sandwich toaster until the cheese melts.
