Pisco sour

Ingredients

for 1 person

Sugar syrup
1 dl water
25 g sugar
Cocktail
6 cl Capel Pisco
4 cl lime juice
fresh egg white
some  ice cubes
To serve
2 pinch cinnamon

How it's done

Sugar syrup

Mix the water and sugar in a pan, bring to the boil. Turn down the heat, simmer for approx. 5 mins. until reduced to a syrup (yields approx. 3 tbsp). Leave the syrup to cool.

Cocktail

Pour the Pisco, lime juice, egg white and sugar syrup into the shaker, add some ice cubes, shake well for approx. 30 secs. Place several ice cubes in the glass, pour the cocktail into the glass through a fine sieve.

To serve

Garnish the cocktail with cinnamon.
