Pancakes with berries
Ingredients
for 2 people
400 g | mixed berries (e.g. raspberries, blueberries, strawberries) |
1 tbsp | lemon juice |
½ tbsp | sugar |
125 g | white flour |
2 ½ tbsp | sugar |
2 tsp | baking powder |
1 | organic lemon, use a little grated zest |
1 ½ dl | ayran |
1 | egg |
oil for frying |
How it's done
Berries
Mix the berries, lemon juice and sugar in a bowl, cover and set aside.
Batter
Mix the flour, sugar, baking powder and lemon zest in a bowl, create a well in the middle. Combine the ayran and egg, gradually pour into the well while whisking, continue whisking until the batter is smooth.
Pancakes
Heat a dash of oil in a non-stick frying pan. Reduce the heat, spoon the batter into the pan to make pancakes of approx. 7 cm in diameter. Once the undersides are cooked and no longer stick to the pan, flip the pancakes, cook for approx. 1 min. Serve the pancakes with the berries, drizzle with the berry juice.
