Ramen carbonara
Ingredients
for 4 people
| 250 g | ramen noodles |
| salted water, boiling |
| 80 g | bacon, cut into thin slices |
| 250 g | carrots, cut into thin slices |
| 2 | spring onions incl. green parts, cut into thin rings |
| 2 tbsp | soy sauce |
| 2 | fresh eggs |
| 2 | fresh egg yolks |
| 80 g | grated Parmesan |
How it's done
Ramen
Cook the ramen noodles in boiling water for approx. 3 mins. until just al dente, set aside approx. 200 ml of the cooking water, drain the noodles.
Bacon
Fry the bacon in a frying pan until crispy, without adding any oil. Remove, drain on paper towels, set aside. Place the carrots and spring onions in the same pan, cover and cook for approx. 5 mins.
Carbonara
Place the soy sauce and all the other ingredients in a bowl, mix well. Mix in approx. 2 tbsp of the reserved cooking water. Add the egg mixture, ramen noodles and the remainder of the cooking water to the pan of vegetables, mix, plate up. Top with the reserved bacon.
