Kohlrabi tonnato
Ingredients
for 4 people
| 1 tin | white tuna in oil (approx. 160 g), drained, broken into chunks |
| 100 g | crème fraîche |
| 2 tbsp | mayonnaise |
| 5 | caper berries, stalks removed |
| 1 tsp | fig mustard |
| ¼ tsp | salt |
| 800 g | kohlrabi x |
| 1 | organic lime xxx |
| 1 tbsp | fig mustard |
| 30 g | caper berries |
| a little | sea salt |
How it's done
Tuna sauce
Place the tuna in a measuring cup along with all the other ingredients up to and including the salt, puree.
To serve
Spread the tuna sauce on a plate, mix the kohlrabi with the lime juice, spread on top, brush with the mustard. Top with the caper berries, lime zest and fleur de sel.
