Asian kohlrabi salad
Ingredients
for 4 people
| 2 tbsp | fish sauce |
| 2 tbsp | soy sauce |
| 1 | organic lemon, grated zest and 2 tbsp of juice |
| 1 tbsp | ground cane sugar |
| 1 | garlic clove, finely chopped |
| 800 g | kohlrabi, cut into thin slices |
| 1 | red chilli pepper deseeded, cut into thin strips |
| ½ bunch | Thai basil, finely chopped |
| 40 g | salted, roasted peanuts |
How it's done
Dressing
In a bowl, mix the fish sauce with all the other ingredients up to and including the garlic.
Salad
Add the kohlrabi and chilli pepper to the dressing, mix, leave to infuse for approx. 10 mins.
To serve
Mix the basil and peanuts into the salad, plate up.
