Asian kohlrabi salad

Ingredients

for 4 people

Dressing
2 tbsp fish sauce
2 tbsp soy sauce
organic lemon, grated zest and 2 tbsp of juice
1 tbsp ground cane sugar
garlic clove, finely chopped
Salad
800 g kohlrabi, cut into thin slices
red chilli pepper deseeded, cut into thin strips
To serve
½ bunch Thai basil, finely chopped
40 g salted, roasted peanuts

How it's done

Dressing

In a bowl, mix the fish sauce with all the other ingredients up to and including the garlic.

Salad

Add the kohlrabi and chilli pepper to the dressing, mix, leave to infuse for approx. 10 mins.

To serve

Mix the basil and peanuts into the salad, plate up.
