Apple rice pudding with pistachios
Ingredients
for 4 people
| 1 litre | full-cream milk |
| 2 | apples, cut into approx. 2 cm cubes |
| 200 g | round grain rice (e.g. Bomba) |
| 2 tbsp | sugar |
| ¼ tsp | salt |
| 1 ½ tbsp | pistachio spread |
| 1 | apple, thinly sliced |
| 50 g | salted, roasted pistachios, coarsely chopped |
How it's done
Rice pudding
Pour the milk into a pan along with all the other ingredients up to and including the salt, bring to the boil while stirring. Reduce the heat, simmer for approx. 25 mins. over a low heat, stirring occasionally to form a thick, creamy rice pudding.
To serve
Plate up the rice pudding, top with the pistachio spread. Decorate the rice pudding with the apple slices and pistachios.
