Pomegranate and broccoli tartare

This broccoli tartare is a creative, healthy version of the classic tartare. It makes a refreshing starter or a fancy snack, and is a new and unconventional way to enjoy broccoli. Throw in some fruity pomegranate seeds and a few slices of crispy bread, and all will be well.

Ingredients

for 4 portions

Broccoli
500 g broccoli, cut into pieces
  salted water, boiling
Tartare
onion, finely chopped
3 tbsp pine nuts, roasted, coarsely chopped
200 g cream cheese, plain
50 g pomegranate seeds
2 tsp lemon juice
  salt and pepper to taste

How it's done

Broccoli

Cook the broccoli in boiling salted water for approx. 4 mins. until al dente, drain.

Tartare

Finely chop the broccoli, place in a bowl. Add the pine nuts and all the other ingredients up to and including the lemon juice, mix, season.
