Dan Dan noodles are warming comfort food! The creamy, spicy sauce, noodles and aromatic mince meat come together to create a hearty meal that is among my firm favourites. The smooth sauce made from chilli oil, sesame paste and Sichuan pepper guarantees an explosion of flavour. Spring onions and roasted peanuts round off the dish.

Ingredients

for 4 people

Chilli oil
2 tsp sesame seeds
1 tsp chilli flakes
½ tsp 5-spice mix
½ tsp Szechuan pepper, crushed
½ dl peanut oil
Meat
250 g minced meat (pork)
garlic cloves, finely grated
1 tbsp ginger, finely grated
1 tbsp soy sauce
½ tbsp sesame oil
1 tsp sugar
½ tsp Szechuan pepper, crushed
½ tsp 5-spice mix
Sauce
2 tbsp tahini (sesame paste)
3 tbsp soy sauce
2 tbsp rice vinegar
1 tsp sugar
garlic clove, finely grated
Noodles
250 g ramen noodles
pak choi, leaves broken off, halved lengthwise
  salted water, boiling
spring onion incl. green part, cut into thin rings
2 tbsp salted peanuts, coarsely chopped

How it's done

Chilli oil

In a small, heat-resistant bowl, mix the garlic with all the other ingredients up to and including the pepper. Heat the oil in a small pan, pour over the spices, leave to cool. Cover the chilli oil and leave to infuse for at least 1 hr.

Meat

In a bowl, mix the meat with all the other ingredients up to and including the five-spice. Fry the meat in a non-stick frying pan for approx. 10 mins., stirring occasionally.

Sauce

In a bowl, mix the tahina with all the other ingredients up to and including the garlic, add the chilli oil, mix.

Noodles

Add the noodles and pak choi to the boiling salted water, reduce the heat, leave the noodles to soak for approx. 3 mins. Set aside approx. 100 ml of the cooking water, drain the noodles. Add the noodles and cooking water to the sauce, mix. Plate up the noodles with the mince meat, spring onion and peanuts.
