Cauliflower chilli con pollo
Ingredients
for 2 people
½ tbsp | olive oil |
300 g | mince (chicken) |
¼ tsp | salt |
½ tbsp | olive oil |
1 | onion, finely chopped |
1 | garlic clove, squeezed |
300 g | cauliflower, cut into florets |
350 g | puréed tomatoes |
3 dl | water |
¾ tsp | salt |
1 tin | black beans (approx. 120 g), rinsed, drained |
½ tbsp | hot paprika |
How it's done
Chicken
Heat the oil in a cooking pot. Add the mince, brown for approx. 5 mins. Remove, season with salt and set aside. Reduce the heat.
Cauliflower
Heat the oil in the same pot. Add the onion and garlic, sauté for approx. 2 mins. Add the cauliflower and cook for approx. 2 mins. Pour in the passata and the water, bring to the boil, season with salt. Reduce the heat, return the mince to the pot, mix, cover and simmer for approx. 10 mins. Add the beans and the paprika and heat gently.
