Noodles with asparagus and chicken

Ingredients

for 4 people

Sauce
3 tbsp rice vinegar
3 tbsp soy sauce
2 tbsp tahini (sesame paste)
½ tsp chilli flakes
Noodles
200 g ramen noodles
500 g green asparagus , lower third peeled, cut into pieces approx. 3 cm long
  salted water, boiling
Meat
300 g mince (chicken)
1 tbsp olive oil
onion, finely chopped
garlic clove, squeezed
¼ tsp salt

How it's done

Sauce

In a small bowl, mix the vinegar with all the other ingredients up to and including the chilli flakes.

Noodles

Cook the noodles and asparagus in boiling salted water for approx. 3 mins. until al dente. Drain the noodles and asparagus, retain 200 ml of the cooking water, set aside.

Meat

Heat the oil in a non-stick frying pan. Add the mince, brown for approx. 5 mins. Reduce the heat, add the onion and garlic, sauté for approx. 3 mins., season with salt. Add the sauce with the reserved cooking water, bring to the boil. Reduce the heat, add the noodles and asparagus, heat through.
