Chilli sausage with grilled vegetables
Ingredients
for 4 people
| 4 tbsp | rice vinegar |
| 2 tbsp | olive oil |
| 1 tsp | liquid honey |
| ½ tbsp | sambal oelek |
| 1 | green chilli, deseeded, finely chopped |
| 1 | organic lime, use a little grated zest and 1 tsp of juice |
| ¼ tsp | salt |
| 400 g | fennel, cut lengthwise into eighths |
| 400 g | zucchiolo, cut into slices approx. 5 mm thick |
| 2 | red onions, cut into slices approx. 5 mm thick |
| 3 tbsp | olive oil |
| ½ tsp | salt |
| 1 | Ticino Salsiccia spiral chilli sausage (approx. 500 g) |
| 1 | green chilli, deseeded, cut into rings |
How it's done
Sauce
In a bowl, mix the vinegar with all the other ingredients up to and including the salt.
Vegetables
Brush the fennel, zucchiolo and onions with oil, season with salt.
Charcoal/gas/electric grill
With the lid up, grill the vegetables and sausage over/on a medium heat (approx. 200 °C) for approx. 15 mins., turning occasionally. Place the vegetables in the sauce, mix, serve on a platter with the sausage. Sprinkle with the chilli.
