Grilled chicken burritos

Ingredients

for 4 people

Chicken
2 tbsp sweet mustard
2 tbsp white balsamic vinegar
2 tbsp olive oil
3 tbsp lemon syrup
1 tsp salt
a little  pepper
560 g tender chicken breast fillets
Charcoal/gas/electric grill
whole-grain tortillas
Burritos
250 g mini cucumbers, cut lengthwise into thin slices
200 g crème fraîche
¼ tsp salt
a little  pepper
1 bunch coriander

How it's done

Chicken

In a small bowl, combine the mustard with all the other ingredients up to and including the syrup, season. Mix half of the marinade with the chicken fillets, cover the remainder of the marinade and set aside.

Charcoal/gas/electric grill

With the lid down, grill the chicken fillets over/on a medium heat (approx. 200 °C) for approx. 10 mins. all over.

Burritos

Mix the cucumber with the reserved marinade. Spread the crème fraîche over the tortillas, season. Top with the chicken fillets, cucumber and coriander. Fold the tortillas.
