Grilled courgette and Tabasco salad

Ingredients

for 4 people

Dressing
4 tbsp red wine vinegar
2 tbsp olive oil
2 tsp red Tabasco sauce
¼ tsp salt
a little  pepper
Charcoal/gas/electric grill
1 kg courgette, cut lengthwise into slices approx. 5 mm thick
2 tbsp olive oil
1 ¼ tsp salt
a little  pepper
To serve
60 g pine nuts, roasted
4 sprig thyme, leaves torn off
red chilli pepper, deseeded, cut into thin rings

How it's done

Dressing

Whisk the vinegar, oil and Tabasco in a bowl, season.

Charcoal/gas/electric grill

Brush the courgette slices with oil, season. With the lid up, grill over/on a medium heat (approx. 200 °C) for approx. 2 mins. on each side.

To serve

Add the courgette to the dressing, mix. Sprinkle with the pine nuts, thyme and chilli pepper.
