Grilled courgette and Tabasco salad
Ingredients
for 4 people
| 4 tbsp | red wine vinegar |
| 2 tbsp | olive oil |
| 2 tsp | red Tabasco sauce |
| ¼ tsp | salt |
| a little | pepper |
| 1 kg | courgette, cut lengthwise into slices approx. 5 mm thick |
| 2 tbsp | olive oil |
| 1 ¼ tsp | salt |
| a little | pepper |
| 60 g | pine nuts, roasted |
| 4 sprig | thyme, leaves torn off |
| 1 | red chilli pepper, deseeded, cut into thin rings |
How it's done
Dressing
Whisk the vinegar, oil and Tabasco in a bowl, season.
Charcoal/gas/electric grill
Brush the courgette slices with oil, season. With the lid up, grill over/on a medium heat (approx. 200 °C) for approx. 2 mins. on each side.
To serve
Add the courgette to the dressing, mix. Sprinkle with the pine nuts, thyme and chilli pepper.
