Grilled mackerel with apricot salsa
Ingredients
for 4 people
5 | apricots, cut into cubes |
1 | shallot, finely chopped |
2 tbsp | white balsamic vinegar |
2 tbsp | olive oil |
4 sprig | thyme, leaves torn off |
4 | mackerel X |
1 tbsp | olive oil |
1 | organic lemon, use a little grated zest and 1 tbsp of juice |
½ tsp | salt |
a little | pepper |
½ bunch | thyme |
How it's done
Salsa
Place the apricots in a small bowl along with all the other ingredients up to and including the thyme, mix and set aside.
Mackerel
Rinse the mackerel (inside and out) in cold water, pat dry. Combine the oil, lemon zest and juice, season. Use the mixture to coat the mackerel inside and out, stuff with the thyme.
Charcoal/gas/electric grill
With the lid down, grill the mackerel over/on a medium heat (approx. 200 °C) for approx. 7 mins. on each side. Plate up the mackerel, top with the apricot salsa.
