Grilled lamb skewers with peanut sauce
Ingredients
for 8 pieces
100 g | unsalted peanuts |
1 ½ tbsp | soy sauce |
1 | organic lime, use a little grated zest and 1 tbsp of juice |
1 | garlic clove |
3 tbsp | water |
1 ½ tbsp | olive oil |
1 | garlic clove, finely chopped |
1 tsp | ground cumin |
½ tsp | salt |
400 g | lamb fillets, halved lengthwise |
8 | metal skewers |
3 sprig | peppermint, leaves torn off |
How it's done
Peanut sauce
Chop 2 tbsp of peanuts. Place the remaining peanuts in a blender along with all the other ingredients up to and including the water, puree. Mix the chopped peanuts into the sauce.
Lamb skewers
In a bowl, mix the oil with all the other ingredients up to and including the salt. Add the lamb, mix, thread onto the skewers in a wavy design.
Charcoal/gas/electric grill:
With the lid down, grill the lamb skewers over/on a medium heat (approx. 200 °C) for approx. 4 mins. on each side. Plate up the skewers with the peanut sauce, sprinkle with the peppermint.
