Pea couscous with chicken
Ingredients
for 2 people
150 g | frozen peas, defrosted |
120 g | couscous |
2 dl | chicken bouillon, boiling |
100 g | feta |
¾ dl | water |
½ tbsp | olive oil |
200 g | chicken leg pieces |
¼ tsp | salt |
a little | pepper |
1 | garlic clove, squeezed |
½ bunch | basil, torn into pieces |
How it's done
Couscous
Add the peas and couscous to the simmering stock while stirring, mix. Remove the pan from the heat, cover and leave to absorb for approx. 10 mins.
Feta sauce
Place the feta and water in a measuring cup, puree.
Chicken
Heat the oil in a frying pan. Season the chicken, add to the pan, fry for approx. 10 mins., add the garlic, cook briefly.
To serve
Serve the couscous with the chicken, drizzle with feta sauce and top with basil.
