Beef frying steak with strawberry and asparagus salad
Ingredients
for 4 people
1 tbsp | olive oil |
500 g | white asparagus, peeled, quartered lengthwise |
1 tsp | sugar |
½ tsp | salt |
1 dl | orange juice |
1 tbsp | rice vinegar |
1 ½ tbsp | olive oil |
½ tsp | cinnamon |
½ tsp | salt |
a little | pepper |
250 g | strawberries, quartered |
200 g | red chicory, roughly chopped |
8 | thin beef cutlets (e.g. sirloin) (approx. 60 g each) |
¼ tsp | salt |
How it's done
Asparagus
Heat the oil in a frying pan. Add the asparagus, reduce the heat, sprinkle with sugar, fry for approx. 10 mins. until just soft, turning occasionally. Remove the asparagus, season with salt, allow to cool slightly.
Salad
In a bowl, mix the orange juice with all the other ingredients up to and including the pepper. Add the strawberries and chicory along with the asparagus, mix.
Beef frying steak
Heat the oil in a frying pan. Fry the steaks for approx. 30 secs. on each side. Remove, cut in half, season with salt, serve with the salad.
