Zucchiolo salad

Ingredients

for 2 people

Dressing
1 tsp mustard
2 tbsp white balsamic vinegar
3 tbsp olive oil
¼ tsp salt
a little  pepper
Salad
500 g zucchiolo, cut lengthwise into slices approx. 2 mm thick
½ bunch basil, finely chopped
½ bunch flat-leaf parsley, finely chopped
3 tbsp pine nuts, roasted

How it's done

Dressing

Whisk the mustard, balsamic and oil in a bowl, season.

Salad

Add the zucchiolo and all the other ingredients up to and including the pine nuts, mix. Plate up the salad.
