Zucchiolo salad
Ingredients
for 2 people
1 tsp | mustard |
2 tbsp | white balsamic vinegar |
3 tbsp | olive oil |
¼ tsp | salt |
a little | pepper |
500 g | zucchiolo, cut lengthwise into slices approx. 2 mm thick |
½ bunch | basil, finely chopped |
½ bunch | flat-leaf parsley, finely chopped |
3 tbsp | pine nuts, roasted |
How it's done
Dressing
Whisk the mustard, balsamic and oil in a bowl, season.
Salad
Add the zucchiolo and all the other ingredients up to and including the pine nuts, mix. Plate up the salad.
