The run-up to Christmas is full of anticipation and includes feasting on buttery-soft biscuits. We love them all – from Mailänderli to jammy dodgers and Brunsli. The latter are like a little cake yet similar in consistency to the popular chocolate chip cookies. We're already looking forward to cold winter days on the sofa with a book, a cup of tea and a handful of biscuits.

Ingredients

for 12 pieces

Dough
300 g dark chocolate, finely chopped
60 g butter, cut into pieces
125 g sugar
eggs
50 g white flour
½ tsp cinnamon

How it's done

Dough

Place the chocolate and butter in a thin-sided bowl, suspend the bowl over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate and stir until smooth, allow to cool slightly. Using the whisk on a mixer, beat the sugar and eggs in a bowl until the mixture is light and frothy. Mix in the chocolate. Combine the flour and cinnamon, mix in.

Shape

Using two teaspoons, place approx. 12 mounds on a baking tray lined with baking paper.

To bake

Approx. 8 mins. in an oven preheated to 180 °C (convection). Remove from the oven, allow to cool slightly, leave the biscuits to cool completely on a rack.
