Carrot and spinach dal
Ingredients
for 2 people
| 1 tbsp | olive oil |
| 300 g | carrots, cut into slices approx. 1 cm thick |
| 1 | onion, cut into strips |
| 5 dl | cashew drink |
| 150 g | red lentils |
| 2 tbsp | red curry paste |
| 150 g | leaf spinach |
| ¾ tsp | salt |
How it's done
Dal
Heat the oil in a pan. Add the carrots and onion, sauté for approx. 2 mins. Pour in the cashew drink, add the lentils and curry paste, bring to the boil. Reduce the heat, simmer for approx. 8 mins. Set aside approx. 2 tbsp of spinach, gradually add the rest to the pan, allow to wilt, mix, season with salt.
To serve
Plate up the dal, garnish with reserved spinach leaves.
