Fried onion butter
Ingredients
for 250 g
3 tbsp | olive oil |
100 g | onions, cut into thin slices |
250 g | butter, cut into pieces, soft |
½ tsp | Fine Food Beurre à la Fleur de Sel de Guérande |
How it's done
Onion
Heat the oil in a pan. Fry the onion over a medium heat for approx. 15 mins. until golden brown. Remove and drain on paper towels, allow to cool.
Butter
In a bowl, beat the butter using the whisk on a mixer for approx. 8 mins. until the butter is white and creamy. Set aside 2 tbsp of the fried onions, finely chop the rest, add to the butter along with the salt, mix.
Shape
Transfer the butter to a piping bag with a serrated nozzle (approx. 10 mm in diameter), pipe blobs onto a baking tray lined with baking paper. Top with the reserved fried onions, leave to set in the fridge for approx. 30 mins.
