White date pralines
Ingredients
for 12 pieces
| 60 g | frozen raspberries, defrosted |
| ¼ tsp | ground cardamom |
| 12 | Medjool dates |
| 6 | walnut kernels, halved lengthwise |
| 1 bag | white cake icing (approx. 60 g) |
| 2 tbsp | raspberry crumble |
How it's done
Raspberry puree
Empty the raspberries into a small bowl, mash with a fork, mix in the cardamom.
Pralines
Cut open the dates lengthwise, remove the stones, fill with 1 tsp of the raspberry puree, insert one walnut half into each date.
Icing
Melt the bag of cake icing in a hot bain-marie. Pour the icing into a jar. Dip the dates in the icing one at a time, place on a plate lined with baking paper. Top with the freeze-dried raspberries, freeze for approx. 10 mins.
