Scandinavian prawns on toast
Ingredients
for 4 people
| 1 | shallot, finely chopped |
| 200 g | crème fraîche |
| 2 tbsp | grated horseradish in a jar |
| ¼ tsp | salt |
| 250 g | sourdough bread, in 4 slices, toasted |
| 240 g | shelled, cooked prawn tails |
| ½ bunch | radish , cut into approx. 3 mm slices |
| ½ bunch | chives, finely chopped |
| a little | sea salt |
| a little | pepper |
| ½ | organic lemon, cut into wedges |
How it's done
Horseradish mayonnaise
In a bowl, mix the shallot with all the other ingredients up to and including the salt.
Prawns on toast
Spread the horseradish mayonnaise on top of the slices of toast. Top with the prawns, radish and chives, season. Plate up the prawns on toast, serve with the lemon wedges.
