Scandinavian prawns on toast

Ingredients

for 4 people

Horseradish mayonnaise
shallot, finely chopped
200 g crème fraîche
2 tbsp grated horseradish in a jar
¼ tsp salt
Prawns on toast
250 g sourdough bread, in 4 slices, toasted
240 g shelled, cooked prawn tails
½ bunch radish , cut into approx. 3 mm slices
½ bunch chives, finely chopped
a little  sea salt
a little  pepper
½  organic lemon, cut into wedges

How it's done

Horseradish mayonnaise

In a bowl, mix the shallot with all the other ingredients up to and including the salt.

Prawns on toast

Spread the horseradish mayonnaise on top of the slices of toast. Top with the prawns, radish and chives, season. Plate up the prawns on toast, serve with the lemon wedges.
