Brookies
Ingredients
for 12 pieces
| 120 g | dark chocolate, finely chopped |
| ½ dl | sunflower oil |
| 140 g | sugar |
| ¾ dl | water, boiling |
| 130 g | white flour |
| 25 g | cocoa powder |
| ½ tsp | baking powder |
| ¼ tsp | bourbon vanilla powder, as desired |
| 1 pinch | salt |
How it's done
Melt the chocolate
Place the chocolate and oil in a thin-sided bowl and suspend over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate, stir until smooth.
Dough
Place the sugar in a bowl, pour in the water, mix until the sugar has dissolved, pour into the chocolate while stirring. Mix the flour with all the other ingredients up to and including the salt, add to the chocolate mixture, mix. Leave to stand for approx. 5 mins.
Shape
Using a medium-sized ice cream scoop, shape the dough into 12 half-balls and place on a baking tray lined with baking paper, leaving plenty of space between each cookie.
Bake
Approx. 10 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, allow to cool for approx. 10 mins., slide onto a cooling rack and leave to cool completely.
