How about a matcha tiramisu? In this recipe, the intense matcha flavours combine with the irresistible creaminess of the tiramisu to create a true taste sensation. If you too have a penchant for matcha, then you won't want to miss out on this dessert.

Ingredients

for 10 people

Matcha syrup
50 g sugar
2 ½ tsp matcha powder
1 ¾ dl water
Mascarpone cream
500 g mascarpone
250 g half-fat quark
100 g icing sugar
1 tbsp lemon juice
2 ½ dl cream, beaten until stiff
Tiramisu
260 g sponge fingers
a little  matcha powder, to dust

How it's done

Matcha syrup

Mix the sugar and matcha powder in a small bowl. Pour in the water, whisk until the sugar has dissolved and there are no clumps of matcha remaining. Set aside the syrup.

Mascarpone cream

Using the whisk on a mixer, whisk the mascarpone, quark, sugar and lemon juice until smooth. Fold in the whipped cream.

Tiramisu

Briefly dip 1/3 of the sponge fingers in the syrup one at a time, place in the dish. Top with 1/3 of the mascarpone cream. Repeat this step two more times. Cover the tiramisu and chill for approx. 2 hrs. Dust with matcha powder shortly before serving.
