Matcha tiramisu
Ingredients
for 10 people
| 50 g | sugar |
| 2 ½ tsp | matcha powder |
| 1 ¾ dl | water |
| 500 g | mascarpone |
| 250 g | half-fat quark |
| 100 g | icing sugar |
| 1 tbsp | lemon juice |
| 2 ½ dl | cream, beaten until stiff |
| 260 g | sponge fingers |
| a little | matcha powder, to dust |
How it's done
Matcha syrup
Mix the sugar and matcha powder in a small bowl. Pour in the water, whisk until the sugar has dissolved and there are no clumps of matcha remaining. Set aside the syrup.
Mascarpone cream
Using the whisk on a mixer, whisk the mascarpone, quark, sugar and lemon juice until smooth. Fold in the whipped cream.
Tiramisu
Briefly dip 1/3 of the sponge fingers in the syrup one at a time, place in the dish. Top with 1/3 of the mascarpone cream. Repeat this step two more times. Cover the tiramisu and chill for approx. 2 hrs. Dust with matcha powder shortly before serving.
