Greek New Year's Cake (vasilopita)
Ingredients
for 12 pieces
| 200 g | butter, soft, cut into pieces |
| 150 g | icing sugar |
| ½ tsp | nutmeg |
| ¼ tsp | salt |
| 4 | eggs |
| 1 | organic orange, grated zest and the juice |
| 200 g | white flour |
| 2 tsp | baking powder |
| 80 g | shelled ground almonds |
| 1 | almond |
| icing sugar, to dust |
How it's done
Batter
Place the butter, sugar, nutmeg and salt in a bowl, mix using the whisk attachment on a mixer. Add the eggs and continue to beat until the mixture becomes lighter in colour. Stir in the orange zest and juice. Combine the flour, baking powder and almonds, mix into the batter. Transfer the batter to the prepared tin. Place the almond (king) in the batter.
Bake
Approx. 35 mins. in the lower half of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, remove the tin frame, slide the cake onto a cooling rack and leave to cool completely. Dust with icing sugar.
