White chocolate mousse with poppy seeds
Ingredients
for 4 people
| 200 g | white chocolate, finely chopped |
| 2 | eggs |
| 50 g | sugar |
| 2 ½ dl | full cream, beaten until stiff |
| 10 g | blue poppy seeds |
| 200 g | frozen berry mixture |
| 1 tbsp | sugar |
| 1 | organic lemon, use grated zest and 1 tbsp of juice |
How it's done
Chocolate
Place the chocolate in a thin-sided bowl and suspend over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate and stir until smooth.
Chocolate decorations
Using a spoon, place 4 small dots of melted chocolate on a plate lined with baking paper, smooth out using a brush, chill.
Mousse
Using the whisk on a mixer, beat the eggs and sugar in a bowl for approx. 5 mins. until the mixture becomes lighter in colour. Add the chocolate and mix. Carefully fold the whipped cream and poppy seeds into the mixture using a rubber spatula, cover and chill for approx. 3 hrs.
Coulis
Place the berries, sugar, lemon zest and lemon juice in a pan, cover and simmer for approx. 5 mins. until soft. Leave the berries to cool then pass through a sieve.
Serve
Scoop out the mousse using 2 tablespoons and arrange on plates along with some of the berry coulis.
