Chai latte with rum
Ingredients
for 4 people
1 | cinnamon stick |
2 | star anise |
10 | black peppercorns |
4 dl | water |
2 tbsp | sugar |
½ tbsp | Rooibos tea, natural |
1 | vanilla pod, seeds removed |
¼ tsp | nutmeg |
2 dl | full-cream milk |
1 dl | single cream |
1 ½ dl | brown rum |
2 pinch | cinnamon |
2 pinch | nutmeg |
How it's done
Spices
Toast the cinnamon, star anise and pepper in a frying pan without any oil.
Chai tea
Bring the water to the boil. Remove the pan from the heat, add the sugar and all the other ingredients up to and including the nutmeg along with the spices, cover and leave to steep for approx. 15 mins.
Chai rum latte
Froth the milk, pour into the glasses. Pour the cream into the chai tea, return to the boil, pour the tea through a sieve into a measuring cup, pour in the rum, pour into the glasses over the milk foam, dust with cinnamon and nutmeg.
