Super green ice lollies

As much as I love smoothies, I find they taste even better when they are frozen to make ice lollies and enjoyed on a hot summer's day. These ice lollies are as healthy as they are refreshing; they are rich in nutrients from the spinach, and the mango, lime and mint make for a light, tropical flavour. The avocado gives the lollies a creamy consistency while keeping them light and healthy.

Ingredients

for 12 pieces

150 g mangoes, cut into pieces
avocado, cut into pieces
60 g baby spinach
8 leaf peppermint
2 ½ dl almond drink
lime, the whole juice
1 tbsp maple syrup

How it's done

Puree the mango along with all the other ingredients up to and including the maple syrup in a blender until smooth. Fill the mixture into the ice lolly moulds, insert the wooden lolly sticks and freeze the lollies for at least 6 hrs.
