Tomato & ginger soup

Ingredients

for 4 people

Bacon
100 g bacon, sliced
Soup
1 tbsp olive oil
onion, coarsely chopped
garlic cloves, coarsely chopped
1 kg vine-ripened tomato, cut into pieces
30 g ginger, finely grated
1 tsp sugar
1 tsp salt
1 dl white wine
1 dl water
Serve
1 tbsp candied ginger, finely chopped

How it's done

Bacon

Without adding any oil, gently fry the rashers of bacon in a non-stick frying pan until crispy. Remove and drain on paper towels, set aside.

Soup

Heat the oil in a pan. Add the onion and garlic, sauté for approx. 3 mins. Add the tomatoes, ginger, sugar and salt, cook for a further 2 mins. Pour in the wine and water, cover and cook for approx. 10 mins. until soft, puree.

Serve

Plate up the soup, top with the candied ginger and reserved bacon.
