Tomato & ginger soup
Ingredients
for 4 people
| 100 g | bacon, sliced |
| 1 tbsp | olive oil |
| 1 | onion, coarsely chopped |
| 2 | garlic cloves, coarsely chopped |
| 1 kg | vine-ripened tomato, cut into pieces |
| 30 g | ginger, finely grated |
| 1 tsp | sugar |
| 1 tsp | salt |
| 1 dl | white wine |
| 1 dl | water |
| 1 tbsp | candied ginger, finely chopped |
How it's done
Bacon
Without adding any oil, gently fry the rashers of bacon in a non-stick frying pan until crispy. Remove and drain on paper towels, set aside.
Soup
Heat the oil in a pan. Add the onion and garlic, sauté for approx. 3 mins. Add the tomatoes, ginger, sugar and salt, cook for a further 2 mins. Pour in the wine and water, cover and cook for approx. 10 mins. until soft, puree.
Serve
Plate up the soup, top with the candied ginger and reserved bacon.
