Celeriac and apple salad with buttermilk dressing

Ingredients

for 4 people

Dressing
1 tbsp Dijon mustard
2 tbsp lemon juice
2 tbsp olive oil
2 dl buttermilk
¾ tsp salt
a little  pepper
Salad
400 g celeriac, peeled, coarsely grated
red-skinned apples, cut into sticks
red onion, cut into thin slices
80 g dates, pitted, cut into thin strips
50 g walnut kernels, roasted, coarsely chopped

How it's done

Dressing

In a bowl, mix the mustard with all the other ingredients up to and including the buttermilk, season.

Salad

Add the celeriac, apples, onion and dates to the dressing, mix, cover and leave to infuse for approx. 10 mins. Mix the salad, top with the walnuts.
