Celeriac and apple salad with buttermilk dressing
Ingredients
for 4 people
1 tbsp | Dijon mustard |
2 tbsp | lemon juice |
2 tbsp | olive oil |
2 dl | buttermilk |
¾ tsp | salt |
a little | pepper |
400 g | celeriac, peeled, coarsely grated |
2 | red-skinned apples, cut into sticks |
1 | red onion, cut into thin slices |
80 g | dates, pitted, cut into thin strips |
50 g | walnut kernels, roasted, coarsely chopped |
How it's done
Dressing
In a bowl, mix the mustard with all the other ingredients up to and including the buttermilk, season.
Salad
Add the celeriac, apples, onion and dates to the dressing, mix, cover and leave to infuse for approx. 10 mins. Mix the salad, top with the walnuts.
