Mini Halloween pizzas
Ingredients
for 12 pieces
500 g | half-white flour |
1 ½ tsp | salt |
½ cube | yeast (approx. 20 g), crumbled |
3 ¼ dl | water |
1 tbsp | liquid honey |
1 tbsp | olive oil |
1 | onion, finely chopped |
1 | red chilli pepper, deseeded, finely chopped |
2 dl | puréed tomatoes |
¼ tsp | salt |
a little | pepper |
150 g | mozzarella, thinly sliced |
80 g | pitted black olives, cut into rings |
How it's done
Dough
Mix the flour, salt and yeast in a bowl. Pour in the water and honey, knead to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 1 hr. until doubled in size.
Sauce
Heat the oil in a pan. Add the onion and chilli pepper, sauté for approx. 3 mins. Pour in the tomatoes, bring to the boil. Reduce the heat, simmer for approx. 10 mins., season.
Shape
Divide the dough into 12 portions, shape into balls, flatten gently by hand. On a lightly floured surface, stretch the dough into circles (approx. 10 cm in diameter). Place the flatbreads on two trays lined with baking paper.
Mini pizzas
Spread the tomato sauce on top of the flatbreads. Add the mozzarella.
Bake
Approx. 25 mins. in an oven preheated to 200 °C (convection). Remove, make "spiders" using the olives.
