Fried vegetable parcels
Ingredients
for 12 pieces
1 tbsp | olive oil |
1 | garlic clove, squeezed |
1 | onion, cut into thin slices |
600 g | frozen thai vegetable mix, slightly defrosted |
3 tbsp | soy sauce |
½ bunch | coriander, finely chopped |
12 | rice paper |
oil for frying |
How it's done
Filling
Heat the oil in a non-stick frying pan, add the garlic and onion, sauté. Add the vegetables, stir fry for approx. 5 mins. Add the soy sauce and coriander, mix.
Vegetable parcels
Dip a sheet of rice paper in warm water for approx. 30 secs. then place on a damp cloth. Place 2 tbsp of filling in the middle of the sheet, tightly fold in all sides of the rice paper. Repeat with the remaining rice sheets and filling. Heat a dash of oil in the same frying pan, fry the vegetable parcels in batches for approx. 2 mins. on each side.
