Italian bean salad

Ingredients

for 4 people

Dressing
1 tsp Dijon mustard
5 tbsp red wine vinegar
4 tbsp olive oil
red onion, finely chopped
garlic clove, squeezed
1 tin anchovy fillet (approx. 25 g), drained, finely chopped
a little  pepper
Salad
2 tin white beans (approx. 400 g each), rinsed and drained
500 g cherry tomatoes, quartered
½ bunch oregano, roughly chopped

How it's done

Dressing

Whisk the mustard, vinegar and oil in a bowl. Add the onions, garlic and anchovies, mix, season.

Salad

Add the beans, tomatoes and oregano to the dressing, mix and plate up.
