Italian bean salad
Ingredients
for 4 people
1 tsp | Dijon mustard |
5 tbsp | red wine vinegar |
4 tbsp | olive oil |
1 | red onion, finely chopped |
1 | garlic clove, squeezed |
1 tin | anchovy fillet (approx. 25 g), drained, finely chopped |
a little | pepper |
2 tin | white beans (approx. 400 g each), rinsed and drained |
500 g | cherry tomatoes, quartered |
½ bunch | oregano, roughly chopped |
How it's done
Dressing
Whisk the mustard, vinegar and oil in a bowl. Add the onions, garlic and anchovies, mix, season.
Salad
Add the beans, tomatoes and oregano to the dressing, mix and plate up.
