Italian lemon pasta (pasta al limone)
Ingredients
for 4 people
| 500 g | pasta (e.g. pici) |
| salted water, boiling |
| 1 ¼ dl | full cream |
| 50 g | butter |
| 2 | organic lemons, grated zest and the juice |
| ½ tsp | salt |
| a little | pepper |
How it's done
Pasta
Cook the pasta in boiling salted water until just al dente. Set aside 100 ml of the cooking water, drain the pasta.
Sauce
Place the reserved cooking water, cream, butter, lemon zest and juice (approx. 150 ml) in the same pan, bring to the boil. Turn down the heat and reduce for approx. 5 mins. Add the pasta, mix, simmer for approx. 2 mins., season.
