Oatmeal lemon squares
Ingredients
for 16 pieces
300 g | rolled oats |
150 g | white flour |
¼ tsp | salt |
150 g | butter, melted |
210 g | lemon curd |
500 g | plain greek yoghurt |
100 g | lemon curd |
1 | organic lemon, grated zest and the juice |
2 tbsp | sugar |
How it's done
Oat mixture
Mix the oats, flour and salt in a bowl. Mix in the butter and lemon curd.
Shape
Place ¾ of the oat mixture in the tin, press down with the base of a glass.
Yoghurt
Mix the yoghurt, lemon curd, lemon zest and juice, spread over the base. Mix the remainder of the oat mixture with the sugar, spread on top of the yoghurt.
Bake
Approx. 40 mins. in the lower half of an oven preheated to 180 °C. Remove from the oven, leave to cool completely on a rack, cut into squares.
