Topped summer aubergines
Ingredients
for 4 person
| 400 g | aubergines, cut lengthways into slices approx. 1 cm thick |
| 2 tbsp | olive oil |
| ¾ tsp | salt |
| 150 g | soft goats' cheese |
| ¼ tsp | salt |
| a little | pepper |
| 100 g | Parma ham in slices |
| 50 g | red currants, berries plucked off |
| 100 g | cherry tomatoes, quartered |
| 2 tbsp | crema di Balsamico (balsamic cream) |
How it's done
Charcoal/gas/electric grill
Brush the aubergines with oil, season with salt. With the lid down, grill over/on a medium heat (approx. 200 °C) for approx. 5 mins. on each side.
Soft goat's cheese
Stir the goat's cheese until smooth, season, spread on top of the aubergines.
Topping
Top with the ham, redcurrants and tomatoes. Drizzle with the balsamic cream.
