Banana & blueberry bread

Ingredients

for 12 pieces

Banana mixture
80 g butter, soft, cut into pieces
40 g sugar
¼ tsp salt
1 tsp vanilla paste
¼ tsp cinnamon
eggs
ripe bananas (approx. 200 g)
1 ½ dl milk
Batter
200 g white flour
1 tsp baking powder
1 tsp sodium bicarbonate
100 g blueberries
80 g chocolate cubes
2 tbsp flaked almonds

How it's done

Banana mixture

Place the butter in a bowl, add the sugar, salt, vanilla paste and cinnamon, beat using the whisk on a mixer. Whisk in the eggs and continue to beat until the mixture becomes lighter in colour. Mash the bananas with a fork, add with the milk and mix in.

Batter

Combine the flour, baking powder and baking soda, mix into the banana mixture. Add the blueberries and chocolate, mix. Transfer the batter to the prepared tin. Scatter the flaked almonds on top.

To bake

Approx. 60 mins. in the centre of an oven preheated to 160 °C. Remove from the oven, allow to cool slightly, remove the banana bread from the tin and leave to cool on a rack.
