Green Goddess quinoa salad
Ingredients
for 2 person
| 3 dl | water |
| ½ tsp | salt |
| 150 g | quinoa |
| ½ bunch | coriander, roughly chopped |
| 2 tbsp | lemon juice |
| 1 dl | sour single cream |
| ¼ tsp | salt |
| a little | pepper |
| 250 g | different coloured cherry tomatoes, quartered |
| ½ bunch | coriander, leaves torn off |
How it's done
Quinoa
Bring the water to the boil, season with salt. Add the quinoa, cover and simmer over a low heat for approx. 15 mins. until just soft.
Dressing
Puree the coriander with all the other ingredients up to and including the pepper, pour into a bowl.
Salad
Add the quinoa, cherry tomatoes and coriander to the dressing, mix.
